You can't really go wrong with a good cheese scone, freshly baked and warm from the oven. I do like to add a few little extras to my recipe, I also like to use a nice blend of cheese. You have the control with this recipe though, it's all down to your personal taste.
250g Self-Raising Flour plus 1tsp baking powder and 1tsp mustard powder
70g Salted Butter (cubed)
75g Smoked Cheese plus 60g Strong Cheddar plus 15g Parmesan (or 150g of whichever cheeses you like)
1 Egg Yolk
100ml Milk ( you may need more or less)
For a little spice- I like to add either a teaspoon of chilli powder or 1 finely chopped birds eye chilli
For a little seasoning- I like to add a teaspoon of doenjang (korean soybean paste) or miso paste
Preheat your oven to 200C/180C fan and prepare a baking tray with baking parchment.
Combine the flour, baking powder, mustard powder and butter in a mixing bowl. Rub the butter into the flour until it resembles fine breadcrumbs. (shake the bowl when you think your done, if there are any remaining lumps of butter they'll rise to the top)
add the grated cheese and chilli if using and stir well.
If your using the soybean paste whisk it together with the egg yolk and 50ml of the milk.
Make a well in the centre of your flour mix and add the egg yolk mix, you want to form a soft dough that's not too wet or too crumbly, add the remaining milk bit by bit (you may not need it all) until the dough holds together.
Turn the dough out onto a lightly floured surface and pat down to about 2- 2.5cm thick (you can use a rolling pin if you like). Cut out rounds and lightly knead together the trimmings and repeat.
Transfer your cut out scones to your baking tray. Sometimes I like to top them with a little cheese, brush with egg yolk for a really golden finish or milk for a less vibrant finish (it's only for appearance though so don't worry if you don't). Bake them for about 15 minutes
A cheese scone is only as good as it's topping though, you don't even know what your missing until you try these with our chilli jam
Be warned though, try it once and you'll never be able to have cheese scones without our chilli jam again!
